Instructions
  1. Heat up a large non-stick frying pan over medium heat.
  2. Pour the olive oil in and sauté the shallots for about two minutes.
  3. Add the garlic, chili, chopped tomato and the thyme.
  4. Add 250 ml water and bring the tomato sauce to boil.
  5. Strain and rinse the chickpeas, then add to the boiling tomato sauce. Season with salt and pepper.
  6. Turn down the heat to low and cook for 40 minutes, stirring occasionally.
  7. Serve with the fresh parsley.
