Very green soba noodle

Easy and quick noodle, full with broccoli. Makes a good, healthy and green lunch option.
Ingredients
- 1 piece broccoli (medium size)
- 2 cloves garlic
- 1 piece spring onion/scallion
- 200 g seaweed soba noodle (7.0 oz or 0.4 lb) you can use normal soba or your favourite kind of noodle too
- 1 tbsp Miso paste
Servings: persons
Instructions
- In a big pot boil the noodle according to the instruction on the package.
- When only two minutes left from the boiling time, add the sliced broccoli and boil them together.
- Strain the noodle and the broccoli, but keep about 300 ml from the cooking water.
- Boil this water, then add the sliced garlic and the spring onion/scallion.
- After two minutes switch off the heat, add the Miso paste and mix it well.
- Stir the noodle and the broccoli into this "sauce".
- For decoration, you can add thinly sliced chilli peppers.
Tip:
- If you use seaweed noodle, it is usually salty, so you don't need to add salt or soy sauce. For normal soba noodle, add 3 tbsp soy sauce at the end.
